You’re going to a potluck; they say bring whatever. The easiest option would be a bag of chips and salsa. Maybe you’re feeling a bit more adventurous, so you choose a couple of cheeses and salami to throw on a wooden board. But let’s say you really want to impress people…

These prosciutto wrapped asparagus are a guaranteed party pleaser. Prosciutto, asparagus, and cheese – how could you say no?

As the late Joël Robuchon once said, we’re “preparing good ingredients very simply, without distractions from the flavor of the ingredient self.” There you have it folks!

All you need is 20 minutes, depending how fast those fingers can roll, and you’ll be bringing the party favorite! Added bonus; you can make these a day ahead, and everything you need for this recipe can be found at Costco. I’m all about the one-stop-shop.

Prosciutto Wrapped Asparagus

(Quantities not included; varies depending on how many you’re serving)

  • Fresh Asparagus
  • Italian prosciutto
  • Philadelphia Cream Cheese
  • Balsamic Reduction

Take your asparagus and snap all approximately 1.5 inches from the end. Where they naturally snap is the sweet spot. Lay out your prosciutto on a large cutting board and spread roughly 1 tsp cream cheese over the entire piece. If you want more cheese, add more. If you’re going dairy free, omit the cheese.

Once each prosciutto slice has cream cheese, take two asparagus stems and wrap them in the prosciutto. Pretty self explanatory. Lay them on parchment lined baking tray single file, 1⁄2 inch apart. Wrap in cling-film and refrigerate till your party.

At the gathering, throw these in a 375 degree pre heated oven for 15-18 minutes, till the prosciutto is nicely crisped up and the asparagus are tender. Transfer to a serving dish; serve hot with a drizzle of balsamic reduction.
